I'll echo Kalos, you have fielded responses from all the old-timers on the Chef boards and they have answered excellently.
Maybe if the original poster went back and READ some of the NON-holo posts, you would see how helpful your "real" Chefs really are.
Not to mention, there are a few posts in there from HOLO-chefs who actually read the stickies and still had questions. You will find that any courteous post was answered in kind, and almost immediately at that.
