Dizzy and KD defense for now, until combat upgrade comes out anyway because we really dont know what will be important then

I would choose the state defence personally, since i find it is easier to PvE with no melee/ranged def than it is to PvP without state defences.

IF you were supporting a BH what food / drink combos would you ar him with and why?

Well..do you mean one that hunts jedi? Cause that could be a different story of course. For my BH, I just hunt things not people so mostly use brandy (of course), pikattaand thencitros is a must when I'm using LLC. Not really necessary when just using scatter pistol though - usually it's just pikatta & brandy for that.
Oh and Ithorian mist here and there, depending on what I'm hunting. Also! Sometimes a semi-low fill thak, like 91%, 34fill is good.
Mostly just the brandy & pikatta though.

I forget the name of the drink Fire something ... has similar characteristics as Synthsteak, yet I dont see it sold as often. I use synthsteak ALOT vs Black sun Assassins (Ranged MBH ). Was curious if there was some kind of penalty or con to using the Fire drink or BOTH Synth Steak and fire drink.

Hmm I think maybe you mean flameout... the reason it's not sold that often is because although it's useful short term (much higher damage reduction than synthsteak) it works for very few attacks and usually has either a high fill or costs a lot because filling additives were used.
As far as I know you can never use two foods/drinks that work for the same thing (such as damage reduction) at the same time so while there's no penalty, you simply wouldn't be able to do it. However, I can't say as I've personally tried to use synth & flameout at the same time - but I do know for sure that exo-protein wafers & synthsteak can not be used at once.
