Are we stuck eternally either having our own personal healer (which I hear only a Jedi using heal can do anyway, I guess Docs aren't good enough at it? or maybe I'm hearing wrong) or not participating in any of the high level content in the game?

Yes.

The only reason a Jedi can do better in these battles is due to Avoid Incap. Without that, they are just as screwed as the melee.

What needs to happen is a better balance for these creatures and NPC's. A full group of Melee should kill any Mob. A full group of Ranged should kill any Mob. A Mixed group should be able to kill things faster.

Been reading through the forums, getting the ways people beat certain difficult tasks (Necrosis, the Katarn, and such). It seems that its either "Use Jedi Defenders" or "Have ranged professions and keep them Rooted/Snared".

Where exactly does this leave the melee professions? Either you need someone healing you at a very high rate constantly, or you do nothing. Even with all the supposed "defense" we have, we can't take hits from level 87-92 mobs for long. It all comes down to being able to avoid getting hit, it seems, and you really can't do that if your a melee character.
