#1 I like to hit mind and do mind bleeds, can only Swordsman do that?
#2 I like to be my own Tank, which profs got good defences?
#3 I like to do good knockdowns or dizzys, is this for TK only?
#4 I love to do money missions, which profs. got good area attacks?
#5 I wanna be a PVP king, which prof. should I choose? why?

I like to hit mind and do mind bleeds, can only Swordsman do that? TKA can hit in body, head and legs, but they can't bleed.
I like to be my own Tank, which profs got good defences? TKA and Fencers have good defences, don't forget TKA can buff their minds too.
I like to do good knockdowns or dizzys, is this for TK only? TKA and Fencers have those skills.
I love to do money missions, which profs. got good area attacks? Every brawlerprofession has area attack.
I wanna be a PVP king, which prof. should I choose? why? Fencers are PVP Kings (Stun weapon, kd, dizzy etc..) TKA are not bad too.
I like to solo high mobs, I can do that with that prof? why? Swordsman are the best as far as PVE goes, AP2 Blast Weapon with heavy damages, but TKA can solo high mobs too.
xx Is the best overall prof. because? Everyone has is own preference

My exp:
Swordsman is pretty good in PvP and is the best in PvE (specially for high end mobs). Obviously you already know of the mind hits. But what is great is getting Acklay enhanced powerhammers, you will kill Krayts solo with those. In PvP, I've seen Swordsman do very well if your weapon is up to par.
Fencer is second in my book (currently I'm a Fencer), you have the best defenses because you can dodge multiple attacks with COB macro. Plus you will be the best in PvP with enchanced stun bat, even Jedi fear the almight Fencer. You get dizzy and if you get master brawler you get a k/d but since you dont have the skill points with Master Doc you can just use posture change on people (does the same thing as k/d). Only thing that is bad with Fencer, currently no useable armor piercing weapons which is bad when fighting high end mobs.
TK is the overall average, great in PvE and average in PvP. I take the defenses of TK and meditation line (which is the best). TK has the misconception of being the end all Mele profession, its not. Currently only one damage type, your dead as soon as someone gets a stun weapon on you in PvP. In PvE, its just below Swordsman just because Swordsman has heavy ap weapon. You do get a mind attack but its not as good as Swordsman. K/D Dizzy combo is for lazy one button pushers and very overrated if your opponent has high defenses or taking food (btw high end mobs do not drop to this combo anylonger).
Pikeman, well I'm currently doing pikeman. Its not as bad as I thought actually (except the fact its as bad as Commando in accuracy lol). They have nice weapons if looted, dots are just amazing. However, they dont have what I would see as great defenses. the typical pikeman weapons are screwed up in the range mods as well, who ever heard of negative in pointblank/mid/long range lol.
Either way, if you are going to keep Master Doc, it really depends on what is more important. If you want to do everything good (PvP and PvE) Swordsman with enchanced weapons will do the job. If you want to be the best in PvP, Fencer is the way to go.

Actually I'm not that noob that it appeared 
(Mastered 18 Profs. swordsman within). I ask these question of course not only for me and I already know quite enough from these profs, but it's always nice to hear various pros and cons!
Actually I still don't know which prof to choose, but I know I won't keep Pistoleer for long *hehe*.

Great answers to a good post, everyone has the same questions and should be discussed more. Here are my current skills that I don't plan on changing, and work VERY well for PvP and PvE.
Teras Kasi Master - Master Swordsman - Master Brawler - Novice Fencer - Novice Medic - Scout 3-0-1-0
I find for pvp using my power hammer sliced for speed and banging away at my target's brain works well. For pve I use my scythe sword and area attack if they are kintec vunerable. I use the different stuns,lunges, dizzy's, and knockdowns from all 3 masters also switching weapons, and always get a /tell after a deathblow "how the heck did you do that, you are a wookiee"

) When I was pistoleer, I keptit for as long as I could (too bad no more dodge stacking.....unhitable as a Fencer). Finally had to drop it after no answers when its going to be fixed. Pistoleer is just a profession that has been through the nerf grinder more than any profession in the game (well maybe CHhad itworse lol)

Ah Pistoleer.... I feel the pain .. lol.
Finally, to make a good but quick sum up I'd say :
- PVP => Fencer
- PVE => Swordsman
- Both => TKA
- pwned => Pikeman lol
I'm kidding, I love Pikeman but you know how accurate they are...

guy on my server has three action pool dot's that when combine tick for over 1500 dmg not to mention his mind fire disease and posion lances :/
Hmm that's actually true. I know there are many pikeman loot weapons. With all these dots a pikeman will be uber. And with an (EXCEPTIONAL) Lance (min400-max1500dmg) he would kill everyone. Ok he isn't accurate in hitting but how about the specials and the defences. are they equal to sword/tk/fencer? what you guys think?
Pikeman are, especially at low level, very innacurate. But I really think they are underestimated. I have been a Pikeman (not master) and I was really enjoying it and I could solo some tough critters. Unfortunately it's too much based on luck, on 1 mob you can almost always hit or never hit.
You're right, their weapons are very powerful and cool-looking that's why I love Pikeman.
Talking about defenses, Pikeman take much damages than another melee profession mainly because of the special defense. Look closely :
- Dodge happens often and no damages are taken
- Block happends often and some damages are taken
- Counterattack happends often and all the damages are taken.
I think something can be done here

swordmen have a dizzy posture change like fencer
