If you are really concerned about your win/loss ratio against Jedi, there are some things you can consider. First of all, you don't have to take every mark. Talk to some people, maybe your guildees, and ask if they know anything about the mark. Maybe people will be able to give you advice on tactics or strategies that your mark will try and use against you. This can give you the upper-hand. Also, you should wait till the oppurtune moment to strike. Sometime the Jedi will expose a weakness, and it is then that you should strike. If they are fully buffed talking to their friend at the Mining Outpost, chances are, you'll be in for a big fight. But if you wait when they are unbuffed and off-guard, you will have an advantage against them and be able to play off that for the win.

Most people just try to ride in on a bike with guns ablazing. Although hardcore, this strategy usually leaves you unpaid and unsatisfied. So really, if you take the time to learn about your mark, and maybe tail em' for a bit till the right moment, you'll be able to knock off Jedi after Jedi. Enjoy.
