Which server has the least amount of jedi so I can start a character there.

LOL. Actually I was serious. Test Center is a good place to go if you want Jedi-free experience. There's actually a movement going on right now amongst PvP'ers to create PvP toons on TC -- no Jedi allowed. It works by having two major guilds both locked in permanent guild war. It sounds like a good deal. Test Center has never been reset or wiped clean, and you always get to see the newest patches first before Live.
