The majority of my shots are getting blocked by the Jedi. I missed a ridiculous amount of times with my last fight and as a result lost. What can I do to improve my odds of hitting my target?

You'll need to do everything possible to increase your accuracy while also decreasing his defense. First - if you're a Master Rifleman don't be afraid to use Aim whenever you have the opportunity as it will GREATLY increase your accuracy for around 20 seconds. Secondly, use some accuracy increasing food. One such food is Crispic that averages about +40 accuracy for 10 minutes or so. Another such food would be Duetronium Pyro (something like that) which is a drink that will give you ~200 accuracy for a little less than a minute.

Another way to increase your accuracy is through the use of SEAs. Through a combination of General Ranged Accuracy attachments and the accuracy of your chosen weapon you can gain up to 50 accuracy. Also if you have the time/skillpoints try to invest in the General Ranged Accuracy line of FS skills (I'd also recommend the speed tree).

In order to lower their defense use Spray Shot and Warning Shot if you have it. It's a popular belief that Dizzy and Stun help to lower a target's Defense. While I'm not sure about it myself it doesn't hurt to try and apply it with a Spray Shot. Warning Shot is a Pistoleer skill that will lower their defense by about 40 I believe.

Also I'd like to mention the fact that some guns out there can have rather high accuracy bonuses of 50 or more. While nobody knows for sure if or how these accuracy bonuses are working it'd still be a good idea to ensure you have one with a decent accuracy bonus just in case.
