Depends on your template obviously. If you are a pistoleer probably a pistol, carbineer probablya carbine... etc. etc. >.<
Since you didnt specify its hard to help you.

Thinking of chaning template arounda bit and I'm willing to let the weapon dictate the template.

I would say ALR or HLR...but be careful what kind of PuP you put on it. I made my HLR modified speed 0.98 (with a speed PuP) and attacked so fast that my action drained way to quick. Not that great against PvE...especially when your fighting something with 30K+ ham. One of those mentioned above with a SAC PuP though has not let me down.

My alt is a weaposnmith has been since launch. Have notdone any crafting in 6 months though.
I also have a nice factory full of 180+ damage enhancers as well... So if it's possible I should be set to make it.

What all weapons can be crafted to be SAC and damage capped? I've seen a few posts that there are loot weapons that beat even these crafted weapons...

It takes some patience to find a good WS with time on his hands and a load of cash to make him craft it but you can get most any gun to be good enough to Hunt with. If you wanna let your choice be dictated by the weapon, just find one that you really like and go for it!
