its the little icon that surrounds the name of the bounty if they are silver single bars then its elite and if its a pair of golden double bars then its a boss

In this picture you'll see the mark has gold double chevrons (boss one, the ones that have single silver are called elite).

Those chevrons (bracketts) appear when you target it but only above the actual target when you look at him (up center on the pic) not on his display HAM bar that is duplicated in bigger...

Also if you want to see it by yourself "quick", just go to Dathomir and look for any nightsister, or Rancors, or on Tatooine the Krayt dragons or the Kimogillas on Lok, just a few examples where you will notice the "chevrons"...
