A tin plate can kill a Jedi if you sneak up behind him and slam him hard enough on the head. They don't wear armor usually. Of course it helps if he's distracted.
I wear sneaky clothes to do this, nothing with chains or too many zippers.

Bleed defense, melee defense, and state defense clothing/tapes are what you want against Jedi. Armor should be worn only if they have non-Jedi players with them or you know the Jedi to be a force powers user(in which case you may choose to wear something with kinetic/electricity defense to limit their powers).
For foods, synthsteak and anti-kd foods are also a must unless you have a very high natural defense vs. kd. When going against a Jedi, all that matters is the size of your HAM and as much toughness as you can muster.
If they use force armor, you still have a chance because you might drain their force powers by doing enough damage. If they have a ton of healing, again you have a chance if you force them to keep healing states. But, if they are master defender, you may be in trouble.

It really depends on if you want to be a BH or not. The best Jedi killing templates do not include BH 3000

I heard that one time, a ninja was in a diner and some guy dropped a spoon, so the ninja killed the whole town!

Good jedi killing template would be like Master Brawler/TK/Fencer with extra skill points in maybe medic or defense tree from anther brawler profession
But no matter what the template, keep the target intimidated (intim2 is even better)

Forget fencer, unless you get some exploited acklay baton you won't be doing much damage.
Try pikeman with a rocking DOT weapon, that'll hose over those damn Jedi.
