I do some of both. I often put the odds in my favor by picking a mission I am likely to complete, then if the mark is in a favorable location - one where they are usually vulnerable, I go in Greedo style. If they are in a location that tends to be in their favor, such as their house, I'll stalk them out for a while and stay out of their radar range until I think they're vulnerable.

When I get 200k+ Jedi missions, I tend to do more of Fett style, stalking them and waiting for them to PvP or be busy chatting so they won't notice me coming...

Still, even my Greedo style is planned. I always have a plan before a hunt, even if it isn't the greatest one.

As much as Id like to sound steriotypically like the Fett man, I am a Greedo. I like to get the job done fast, unless Im in a really big RPing mood, then Ill get my mission, take some time to sit in a cantina and have a drink, then make my way to the target.
