Yes, for MCH there's no reason to do multi-gen pets except to achieve twin or triplet levels; Zad's formula will give you a triplet level pet, probably, but its HAM and damage will be a lot less.
Experiment on the HAM, if you want the pet to be able to take more damage, naturally. Experimenting on damage will raise your max damage significantly, but IMO your pets will never do enough damage to make that worthwhile, if you have a combat profession other than CH to do damage yourself. Plus, raising aggression will really skyrocket the CL, and you dont want to push this guy up into solo-pet CL ranges.
VHQ samples tend to have more towards the upper range of stats, and make specials stick better. If you're going to use the Sevorrt/CBD formula, I'd try to use VHQ of those low level DNA since low level specials are more apt not to stick than Rancor samples would be. Since this is a pet for your own use, I'd say take the time and collect a lot more samples than you need, so you can pick and choose the very highest stats for each slot. This can add as much as 1-2k per HAM bar, compared to using just whatever you get first.
Having ranged intim is a nice bonus, though...I'd say if you have twins or triplets, its a viable option to have one dedicated tank and the rest high-damage with ranged attack locked on.

though of course as a MCH I'm sure you've realized that having ranged on a tank pet is usually a bad thing; it tends to mess up with their AI when they get stuck in ranged mode, and constantly run away from their target as their target tries to stay within melee range

Yeah, but I'm tending to specialize a bit in CL 10 non-CH pets, where you don't want them to tank much for you, and having a ranged intim attack where the pet adds a trifle, but a significant trifle in the intim attack while you tank is not too shabby when going after low level NPCs like ragtags/meatlumps strictly for loot.
