where can i find mobs to sample that have ar2. since the creature change I haven't seen any at all

Creatures with AR2 are not sampeable. They are too high of a level. One creature that has AR2 is the Blurrg Rapot on Endor. It has something like 65K HAM or some insane amount and is around 131 CL from my understanding.

Short answer, you don't.
Since the patch, there are few creatures that even have ar2 anymore. According to swgcreatures.com, there are no ar2 creatures under cl 122, let alone under the cl 75 sampling cap.
