What is better Higher HAM or Light Armor? I ask because I want to know where I should put my experimentation...I know fortitude needs to be 500 for light armor. What does Hardness need to be at to get 10k Health? Has there been any creatures made with medium armor? Thanks for your help

So far that I'm aware no creature can be made with Medium Armor since any being with Medium armor in the game is well over 100 Creature Level. As for Ham vs. Armor it's a balance. Seedefenses only work well enough but if the creature has light armor and 6k of health I may reconsider the other pet with high resists and 10k ham. But the real deciding deciding factor is what the pet is designed to do. If it's a PvP pet then armor isn't the top priority. What you want is DOT's coupled with high damage and rate of speed. As pets go many players can take them out with not much effort so might as well make the pet for a suicide run. But if it's a pet built to tank against other creatures then Defenses and HAM take high priority over Damage. There are two main large markets for pet molds and those two are it at least in my opinion. Well and the trophy pet of a MCH.
