It hasen't anything to do with the quality of the animal. Any animal that gives avian meat will give the same avian meat as any other on that planet. Harvested resources are the same in that way as sampled resources.
If you are looking for the best avian meat you can find, you need to check different planets, not different animals on the same planet. Note that higher level creatures will drop more meat than lower level creatures. That is the only difference.

Harvested organics are not the same as minerals/chemicals. They are very often planet specific (corellian avian meat as opposed to naboo avian meat). Names within each category are the indexing item I believe (although I haven't confirmed this since I've never seen a name reappear but it's theoretically possible).
And usually animals are independant of the quality of the organic. However some time ago corellian butterflies and corellian butterfly drones both produced the same kind of insect meat (I was gathering it for camo kits). A shift later they produced different types of meat (both still corellian insect meat but different names), then about a week and a half later they shifted again and both produced the same resource again. But the same type of creature will always produce the same type of resource. Peko pekos will always produce naboo avian meat although the name and stats may be different.
Chances are, you will be disappointed with the price you will get for your formerly uber avian meat. I was a crafting doc pre-CU, and I am now finding that I can get all of the meat that I need by offering 20cpu for in spawn meats.
Uness you are talking about a meat that is OQ/PE/FL all over 900, I wouldn't pay more than my base. If it was all 900, then I might be persuaded to buy at up to 40 or 50 cpu. My guess is that is a whole lot less than you paid for it...
The things that are still useful from your doc storehouse: aBECs, aLS, janta blood, enhanced liquid suspension
Any of the above are used in stim Ds (need matched pairs of the loot drops) and are significantly better than post-CU counterparts.
