First, I want to thank those that contributed to the FAQ's that are stickied. I read through them, and they've been quite helpful.
Being new, I thought I'd share some of the things I've learned, while completing Sampling I & II on Tatooine.
Myself: TKM, 4040 scout
First: the more mask scent the better. I had a tailoring friend make me a +25 mask scent suit, and the success rate definitely went up significantly wearing that. I have explore IV, and the suit, so I have +95 mask scent.
Second: I find that if a critter is not moving or even better, lying prone, I have a much better success rate to sample.
Third: It doesn't feel to me like success depends on the critter being sampled. I feel like I'll fail just as often sampling a worrt as a mountain worrt.
Fourth: If I sample and then immediately kneel, that works better than standing next to the critter. But kneeling first often gives annoying messages about crouching, for a few seconds, which just slows everything down.
Fifth: Milking and then sampling is pretty nice, for gathering precious milk, needed for the grind.
Sixth: If I do get aggro'd, being a TKM is handy.
Seventh: While sampling, I can craft, which uses up all of the samples. And then converting a template into a swirl prong gives overall the best crafting xp for all of those samples. Plus it keeps my inventory uncluttered. It was surprising that during the time sampling is actually occurring, I could craft. (possibly considered an exploit...but I like it, nonetheless).
Anyway, these are my newbie observations. The sampling has been a real learning experience with regard to the critters on Tat.

You'll learn different when you get to try sampling some higher level creatures

True, but to be honest, I've yet to find a milkable creature that has good dna for creature-making. For grinding though, sounds like a good plan.

A couple of more bits of newbie intrigue:
When milking and then sampling. If sampling kills the critter, the milking will still continue to success. This is just super handy when sampling matriach banthas.
Jawa Beer! a little more mask scent never hurts.
