Read the Making a BE Pet section of the 2.0 FAQ in the stickies above. VERY detailed info on what we DO know with regards to these stats (and others). We still don't know everything, but the devs said they'll be pushing out THEIR BE FAQ...eventually.
What the FAQ does NOT tell you is:
Hardiness8 Health
Dexterity 8 Action
Intellect 8 Mind
Fortitude 8 Resist
Power 8 Damage
Courage 8 Attack Speed
Cleverness 8 ToHit
Dependability 8 Affects how often the pet runs away
Endurance 8 ?
Fierceness 8 ?

I too was dumbfounded by the BE crafting system until I read these two posts. Also try experimenting with different combinations. Your experience really depends on what you want to make, Non-CH pets or CH Pets.
Personally, I have chosen the Non-CH route. Sample Huurton pups and Voritor dashers. As an apprentice Pistoleer also I can easily handle Huurton missions on Dantooine. Huurton pups regularly spawn from Huurton liars and one can easily collect upwards of 10-15 samples per liar. Voritor Dashers are quite a bit harder as the are aggro. Use maskscent regulary and walk, don't run up to them.
The combo is Voritor dasher (top left slot), Voritor Dasher (top right slot), Huurton pup (middle left slot), Huurton pup (middle right slot), Huurton pup (bottom slot). Makes CL8-10 everytime. Sell for 16-50K each pet. Some Galaxies have different pricing structures so you will have to decide what is the right price for you and your customers.

While this is generally correct, the FAQ will explain that all of these contribute to everything to a greater or lesser degree. As a rule of thumb this will work well if you don't want to play with the numbers to track things.
Also note that if you get fortitude above 500 you get light armor.
