Let me be frank. When the CU came out I went into retirement and BE is almost completely new to me again. One of my guildmates is a Master CH and would like a Kimo but he's not too sure what he wants out of it. What I would like is a decent recipe for a Kimo with strong/medium armor, strong poison and perhaps knockdown or stun. I'm also a level 58 master Rifleman so keep that in mind when listing creatures for sampling. I can handle myself pretty well but my understanding is the creature can not be a higher level than I am if I am going to sample it. Thank you.

This is something that most BE's argue about, some say your CL effects what you can sample, some say it doesn't, my personaly experience says that is very wrong, i am cl58 and i can sample Malcloks just as well as i can sample any other creature, the level of the creature you can sample is dependant on you DnA sampling line not your CL, the only thing CL does is effect the effectiveness of your mask scent versus the level of the creature doing te detection check and your damage mitigation when you are hit (as well as your health value of course).
As to requesting stong/medium armor, it cannot be done, armor to hit and one other stat no matter what your deed comes out at will ALWAYS revert to a default number that corresoponds with the level of the pet once it has been tamed, trained and called a couple of times, ie a level 25 would always convert and have 2.5k armor or a lvl 70 would always revert to 4k armor (not real numbers but just examples)
Poison, Stun, pshh don't even go there, we DO NOT do specials anymore, specials are now skills that creature handlers learn off of wild creatures when they tame, train and level them which they can then train onto other creatures.
Most recipes atm are extremely easy to make now and most use elite DnA from the wookiee world or from narglatches, go to SWG: Creature Crafter and recipes there are some listed on the forums there.

That not true:
Belisama is Master-BE and and Master-Merchant - CL17 and have no problems to get DNA from Yavin creatures like Wisper birds or sintarils or mamiens (CL55 to 61)
Datura is Master-BE and Master-CH Ranger 0030 - CL61. Her success-rates are at the same creatures as good (or bad) as Belisamas.
The only thing thats easier with a higher CL is to survive when a creature aggros because of the sampling. And Daturas Maskscent is much better as Ranger. (i guess its break also less often because of her higher CL - but you ask about sampling - not about reaching the creature you want to sample *g*)
BTW Armor value reset after taming. So whatever value you have on the deed - after taming and calling the pet a few times it will reset to a value depending on the CL of the pet.
For Specials:
If you want a BE-made pet with specials: ask SOE to change the DNA again. Since CU no BE can make a pet with specials. And nobody know if the game will be changed again.
* But: * CH can train specials to their pets (CH should know more about this). **
