Hi I'm a former Master Ranger and am switching over to try out BE for a change of pace. I am keeping my Ranger Harvesting Tree, but am wondering if there is any value to hanging onto the Wayfaring Tree as a skill for a BE?

I say no. The only creature in the game that you'll likely want to sample where you'll have any difficulty at all is the mutant rancor (CL 75). So assuming you're interested in making high end pets, and will want to sample those, the question comes down to whether or not master scout level masked scent is sufficient or whether you'd be better off aquiring a bunch of dath cammo kits and using box 4 level cammo to sample them. This is something you can test out yourself actually, but honestly I think you'll do just fine with master scout masked scent + masked scent clothing + jawa beer.

i do just fine with 4040 scout +mask sent clothing + jawa beer
