Chefs are also looking for milk, and lots of it. High OQ, PE, and FL are what they're looking for.
To set up your own vendor, you'll need some biz skills in the artisan tree. If you don't have the SP to spare, the alternative is the bazaars (with the new 6000 cr limit, this makes things easier) or, if you have someone identified to buy the goods, leave it on one of their vendors for a prearranged price. I do this with hides all the time with an armorsmith I know who lets me know what she's interested in now, and what she's willing to pay for it.
Another thing I do is just give hides to my friendly neighborhood master tailor; in return, she'sput together some complete wardrobe outfits for me gratis. I also get free slices from her hubby's alt as a result. Not to mention free mind buffs (she's also a master dancer).
In general, high OQ is a good thing, but if the PE isn't also good, it's less attractive to the medics, and I say this as a master medic/master combat medic. Avian meat when the OQ and PE are high cause docs to go nuts, as is happening with Corellian avian on Ahazi right now. It's used in enhancement meds...if the DR is high, so much the better, it results in longer lasting buffs. Herbivore meat is needed for advanced med components. Insect meat is needed for Combat Medic disease packs.
In general, it's a good idea to know some crafters and find out what they're looking for. Some things I won't bother to harvest, as it's not even good for grinding. For example, combat medics have no use for low quality insect meat; they do their pure crafting grinding with Lok wild wheat and Tat fiberplast (for advanced biological effect controllers); they're only interested in high quality stuff for things they'll either use in combat or are planning on selling, which need to be high quality. Chefs look for some other resources for their pure XP grinding activities, so they may not be interested in low quality ingredients that scouts provide them.
