I'm not yet an MBE but I had my first custom order for 3x CL 10 pets, they had to all be different and cool looking, with good HAM, resists, damage (etc) and at least 1 had to have ranged attack.
I made the pets the next day and told him they were ready to collect, this was thursday I think, he bank tipped me the money but hasnt been to collect them, i've contacted him several times about picking them up and he's always busy or will come over later (when I'm about to log off for bed)
I even added him to the shop admin list so he could pick them up at any time, even if I wasnt there.
How long should I hold on to them for? What can I do if he wont collect them? Should I pay him back the money and resell them?

I would not put him on admin list. What is the problem? He paid for them. Forget about them and move on. If he does not come to get them that is his problem not yours.
