I've noticed these stats shift also. VERY frustrating when you go hunting for the best stuff, and experiment just enough to land a perfect level 70 only to have its stats borked.
Still, I'd rather have my AE, Acc, and Def at their max then below it. So, yes, it is frustrating to watch your accuracy go from 185 to 160, but its better then an end pet with 130.
Max it all out as far as you can go, because I do think it is a factor.

I've been working on the assumption that I want AE, Acc, and Def as low as possible relative to Health, State Resist, and Health Regen. I get a lower CL pet for the same Health, State Resist, and Health Regen, and then theAE, Acc, and Def shift up to the CL.
