I draw a distinction between complexity (something our current cloning system is) and a guessing game (something the new cloning system appears to be, and a description I am willing to drop the second we find how to reliably attach specials). Sure, you may consider hoping and praying that your desired specials stick on your clone to be a "greater challenge" of some sort, but I disagree.
I don't know why you would consider the system envisioned in the OP to not be challenging enough. You still have to go out and find creatures with the proper specials, you still have to sample them till you have enough samples of decent quality, you still have to look for the main DNA components of sufficient HAM, resists, CL, and damage. Maybe I'm lazy or something but that sounds like enough of a challenge to me to make one custom ordered clone.
