Ok, I'm going to sidestep the schematic issue (since I think I've given my opinion enough), but wanted to introduce a (hopefully small) hijack.

The main problem with making sweesonberry rolls (which you probably know, given that you provided the resources) is that they require 2 Bantha Butters, each of which requires 20 milk. Bantha Butter is also a component is Pikatta Pie, a much more profitable item (higher demand, and each Pie only requires 1 butter). If you didn't already, you could try offering the milk required for the components as part of your payment. Then there are the INNs used in the rolls, a chef can get a higher profit margin using those in something like Vercupti or Thakitillo, you could also try throwing 500 of those into the deal. That does involve a certain level of trust, though, which may not be possible tracking down random chefs.

Another resource would be to avoid the "big name" chefs (since they usually have their factories running practically 24/7) and look for ones who aren't as busy. A prime candidate would be someone who buys up less than a full run of chef tissuesoff of your vendor (since this can indicate a cash-poor player).

Personally, I'm always happy to do custom orders, but I admit I may be in the minority. I always see it as "market research", since if they're not finding a food for sale, there may be an untapped niche I can fill in the future. Plus, your post reminded me I've got a few loose Bantha butter crates lying around (I miscalculated a prior Pikatta run), maybe I'll run up6 or socrates of Rolls and see how they sell.

As for the trade (I just couldn't leave it alone), unless your profit from the rolls is significantly less than the profit you would've gotten from the tissues, I'd say you're ok. It's entirely possible for both sides to consider themselves "profiting" on a trade, due to different values put on things like resources, time, and skills invested. If you got sufficient value from the rolls (whether in credits, reputation of having a well-stocked vendor, etc), then I don't see a problem with it.
