yea, it's kind of a catch-22 there. Someone is going to be unhappy no matter which way you do it. I can understand that a fun part of CH was going out and collecting high end pets yourself and selling them or using them. But there is just no way that I can see to have that in the game and still make BE a viable profession. Even if you had to battle rediculous odds, go through all kinds of hell, and still have a slim chance of finding such babies, well all know that the market would be flooded with them in a short amount of time if such things existed, and the BE pet market would be history.
I still say though that the thing that killed CH was buffs. The reason to have a pet is to tank, and if you can stand toe to toe with the toughest creatures in the game there is just no need for a tank (you are the tank). And if you can dish out obscene amounts of damage at the same time you are tanking, well, bye bye pets.

One other thing to understand, there are sections of the CH playerbase who hate the idea of BE clones and are pushing for all CL70 and below to be tameable, rare creatures more powerful than top BE stuff etc. When the power of CH was nerfed the power players went to swords/doc, tkm/mrmetc. - leaving the majority of CH left as a hardcore ofpeople who didnt particulary want to buy our pets anyway!
