As far as mollusks and crustaceans go you'll need to find a Shellfish Harvesting tool. It's a loot schematic that can be made by Master Artisans and it looks exactly like a Flora Survey tool. There is a certain set of missions that you can do to get the schematic but I cant remember which one it is (In Anchorhead I think).
Using the tool is super easy but a little dull. Its a good thing in combo with a macro but since the resources don't auto stack you'll need to give a little attention to your inventory every now and again.
