Does it exist in any meaningful amounts? Or was this an "oversight" when they dropped farmers...

The creature needs to be called "domestic (creature name)". A humbaba may give it, but only a domesticated one.
The sad part about domesticated things I've seen, is that they only give like half the resources of what a "wild" one would give, and they're alot more rare.

I've got some. I think you get it from animals that are being herded by NPCs.

Hmmm, interesting....I got several hundred units of domestic meat. Iwill have to look up what I killed for them.

Mawgax on Yavin4 give up a hefty amount per kill. You can spawn them from missions as well.

This may not help with "best" (highest quantity per harvest), but if you go here:
http://swg.allakhazam.com/db/bestiary.html
you can select the type you want next to "has meat", and it will give you a list. This combined with swgcraft.com's resource stat database has proved invaluable to me.
