What creatures are the best to sample now in the new system?

I liked some of the samples I got from Malkoks and Klikniks but other then that have had a hard time finding the good DNA.

tbh i dont think there is any 'good' creatures to sample now, all dna are pretty much level based now, so you would find (apart from a few minor diferences) almost the same sort of dna on most creatures the same level. There's a few exceptions to the rule, but can't really think of any atm.

Huurtons in the warren give pretty good dna. And there's an endless supply of them.

If you've got ROTW you can sample the jagged fang for 1000 power DNA. The respawn on it is 60-70 minutes so can be a hassle if it dies quickly. And with the 499 damage limit on creatures (if you get higher than that the pet is unusable regardless of level and don't expect a fix or an explanation.) its a little bit overkill anyway.
But its fun to play with.

Anakin: Master, I think my lightsaber is getting dull. Its not doing nearly as much damage as it used to.
Obi-Wan: O.k. when we're done showing the youglings around the temple, we'll stop by the bazaar and you can buy a new crystal. I hope you've got a couple million credits saved up for this.
Anakin: WHAT?!!?? I don't have THAT kind of cash!
Obi-Wan: Well you could try sharpening it on these younglings. I've got a headache and all their questions are driving me NUTS!
Anakin: hmmm.... Sharpen my lightsaber on younglings...... hmmmmmm.....
Obi-Wan: uh, that was a joke Anakin. I'll spot you the cash for a new crystal THIS time, but next time you're on your own.

There's a named mouf roarlordon kashyyyk(ryatt trail) that gives 1000 hardiness (and i think 1000 dexterity) and 1000 power. He doesn't take that long to spawn. He's in the 50's or 60's on level - don't remember which. I call him a double elite b/c he has two gold << ... >> bar thingies around his name, not just one.

There's another one as well on the next level down that look promising that seemed to be about level 64.

Well ... let's see. I am sure it isn't the first. I'm sure it isn't the one with the spiders and feral wooks - is that the third? If the last one is the fouth that's not it either.

So my guess is the second one. I recall that you go over a hill and find some moufs and there is a little bridge .. you go over the bridge and there is a grassy area full of moufs (they are so round and cute i think). The 'big' one is at the end of them. Sometimes there are two of him. After him, there is a bridge again and a rodian camp and then carrying on, another bridge. Go over the bridge to get to the trail guide or up the hill before the bridge to get to the mad ex-jedi.

That's as best as I recall and I might be wrong about the levels - I get so confused when I'm asked to name a level by the master trail guide ... i usually end up picking the wrong one and backtracking.

Useing the DNA of Jagged Fang, Overkreetle, and Rogue Fambaa gave me a CL38 Bol with a 53% state resistance! I don't think it's level and statistics are anything special, but my CL70 Bol made mostly with Kliknik DNA only has 28% state resistance.

Yep, hit the Ryatt and sample Jagged Fang on the way in. In the Ryatt you'll have multiple regular Elites and Named Elites.

Goretounge, Wallagut, Rottclaw ( the double Elite mentioned in Dor's post), and all of the regular elites that hang with them. Their spawn times are fast too so you can do a circuit and keep hitting em without downtime. I’ve also seen multiple Goretounges up at once, not sure if this is a bug or what. Plus, there are multiple trails so if there is competition you can just rezone to another.

The Narglatch Cave on Naboo is a good place to get some samples to go with the DNA from the Named Elites. It'll help keep the health and damage high but lower the other stats so you don't go over DL70...too often

This DNA would be best suited for making higher-level creatures, DL50-70.
