Artisan Archive

How exactly do you experiment on an item you craft? I see the percentages for experimenting when crafting but does that mean the expereimentation is done automatically or that I am able to experiment? I know it's a newb question but I've never really taken the time to mess with it. I just did the necessary grinding to get where I am. Any help is greatly appreciated.
