I am completely new to the game, and I started out my character as an Artisan. However, I notice some people have multiple skill sets, like Artisan/Bounty Hunter, or something like that. Forgive my ignorance, but how does one have multiple professions or skill sets? Once i finish out the Master Artisan track, then can I get into other sideline professions? Is there a FAQ somewhere with some good info?

The in-game help might... erm, help. Ctrl+H to open it.
You can have any number of professions, until you run out of skill credits. If you want to be Artisan / Marksman, for example, just go find an NPCMarksman trainer and get Novice Marksman. You can work both up at the same time if you want.

As an example, i am an artisan, but i also have marksman and scout.
I have marksman to take the animals down, and scout to harvest the bone / hide and meat, as i need these for crafting.

Yes I highly reccomend the holocron as well as swgcenter.com
I will boil down to whatyou want to do with your character really and the points to buy the skills to do it.
If you are on Starsider look me up I'll be happy to help.

You have 250 total skill points, which can be spent however you like. As a new player, I would recommend that you train in all 6 novice professions (you already have novice artisan). Just go talk to the other 5 novice trainers (entertainer, brawler, marksman, scout, and medic) and pay 100 credits for novice training.
Play them all (pick up a slitherhorn and play in a cantina, run a couple of easy destroy missions, harvest the meat, heal some wounds in the med center, etc). You're player will naturally progress in more than 1 area. You will also get a feel for several professions. You can actually get quite far in some areas before you hit your 250 skill point cap. Once there, you can surrender skills that you aren't finding very useful. You may have an idea of what you want to do now (say Artisan/Architect), but sometimes dabbling in everything will lead you down a different path (Artisan/Creature Handler, perhaps) that you find more "fun".
Good luck to you.

One important thing to note in this process also is:
When you surrender those skills that you feel you don't have a need for you do NOT get the XP back that you used for that box. For instance... if you use 10000 Med XP to get Diagnostics III and then you surrender it you will not get that 10000 XP back. You will need to earn 10000 more XP to retrain that box.
That's just something to think about so that when you surrender a skill you think about it and make sure that is really what you want to do.
