Is finding unknown resources a common thing? Is it significant in anyway? Are these new as of yet undiscovered things that could be of use to someone?

It's not significant. It's just another resource type. For example, an unknown non-ferrous metal can be used in anything that needs inorganic, metal, or non-ferrous metal, but not if it specifically needs Copper or Aluminum.
