This weekend i'm hoping to have not only mastered artisan, but being ready to take on Novice ID and Novice Chef or Tailor (maybe both).
My q is, where's the best location to open a shop? I currently live on Dantooine (on Eclipse) and it's pretty remote. I would think Naboo would be best since it seems to be the centre of Galaxies, and anyone can easily get there. I do plan on selling items on bazaars all over the galaxy, but would like to open up "headquarters" somewhere accessible to most planets.

I'd advise you to wait until Patch 10 is released before deciding to open up a shop.
With the upcoming items nerf, you may find that you will need to pickup Novice Merchant and most of the Management line in order to have enough vendors to sell your Tailor range. The numbers that they are talking about are fairly low, and you may find that the vendor and the items you can sell at Business 3 will be no where near enough to cater to Tailor, let alone Chef as well.

Well on the Lowca galaxy the two best locations (at least in terms of people coming through) would probably be Theed Naboo or Coronet Corellia.

You may still be able to do that, but you just may not be able to have all the items on your vendor(s) at the same time. You can still keep items stocked/wharehoused regardless of the vendor item limit changes though so don't change your goals just yet. But many players don't like doing custom orders or having to wait till a player is online and in their location, such that the vendors can be the best tools to sell items, and as such many crafters do not like the changes being considered to limit the number of items which can be displayed on a vendor based on ones merchant skills.
