Do they remain in stasis if you do not log in? or does the maintenance still run out while you are offline. I haven't logged in for a month and am just wondering if all of my stuff destroyed now?

Player structures are loaded in the game world at all times. If you have not logged on in a month, it is a very good bet that everything is gone.
