That's my main question, I'm not a crafter, but I always try to find a droid, vehicle in other than the base color. So I was wondering if they can be made in other colors, and if so, why do most crafters don't offer color in their work?

Vehicles are made in a basic colour, but artisans can make a customisation kit which will colour it for a short period of time, after that it needs to be re-applied.
Droid engineers can colour droids when they make them (i think) but this fades after a while. i think they make customisation kits too (but not sure on that)

Agree with the comment on Vehicles, they are made in base colours, and you can buy/make a customisation kit to change the colours.
Droids can be made in a variety of colours, some 2 tone (R units, and Surgical droids for example) some only 1 tone (probots) but the colours are about 30 or so in number, so you can ask for any colour combination you like.
Personally I make all of my droids in my personal colours, which are Main colour Dark Blue (my Mon Cal Skin Colour) and second colour (if available) pure white (my droid crafters uniform colour). So if you buy an R2 unit form me, it will be Blue with White Trim (opposite of R2-D2 from the films) and a Probot would be all Dark Blue.
Of course, custom orderers can specify the colours, and for humanoid Droid, the Peronslity chip installed. My favourite is for a friend who has a distinctly amphibious leaning for his droids and accessories, so all of his droids came in bilious green with mustard trim, lovely lol!
