Hello - When crafting any item, during the experiment stage there is a series of red bars on the right that move up the window.
What do those things symbolize?

Those bars are supposed to give you a visual measure of the risk of experimenting the item. In my practice, I've found them to not really represent the real risk, but it's hard to quantify as we don't see the 'rolls', just the results.
