You need to find a non-player charachter SCOUT trainer. Converse with this trainer and learn NOVICE SCOUT. You will then be able to harvest meat, hide and bone from creatures you kill.

/smile I love to see people new to the game. Something about them I love. And you can also buy the resources from the bazaar, but harvesting them yourself is cheaper.

Also be advised that not all creatures have hides and bone with the qualities that matter to you. For example, if you're making artisan foods, you're going to want stuff with a high OQ and DR. If you're making armor, you want to look for stuff with a high OQ, Shock Resistance and Malleability. High is 800+ on those stats. If you're just making clothing, then the stats won't matter.
