I was wondering is there was a way to stop a macro once is has started. The only way I have been able to stop it is to exit the game.

You're going about it the right way. Once in motion, they cannot be stopped unless you exit the game. Petition for a different way to stop it, but don't hold your breath. This was asked for in beta too.

Do you have to level up as a dancer to learn those moves? - or do you just have to trigger them off? - or do they just happen.

Watching that kind of makes me want to be an entertainer...
