Every race has special attributes..

Im Rodian.. and i get a 10% bonus to building weapons....

Wookies are just some of the best overall in terms of stats. but cant weild good armor.. thats why they have higher stat pools.. they can also make the bowcaster.. ( great weapon, only wookies can make or weild ).

Mon Calamri are great for doctors... and engineers...

You have to look at what you wanna do.. read the manual.. or check on the home page here.. and look at what specialties every character has.. and what they dont have.

As a Rodian.. I dont have large pools.. but i can wear almost all armor.. and making that perfect weapon that does 10 more points of damage over the next guy might mean my weapons sell and there's doesnt.

it doesn't matter at all. mind isn't really that important actually, except for surveying to find a resource, once you find it, actions your most important stat. you can fudge them around to make any race decent

What actions use a lot of mind points?

I'm a Mon Calamari with tons of mind points that regenerate quickly. It seems, though, that there isn't much that really taxes mind points.

So Action is your main pool, then mind, then health? So I don't really need health as much as Mind and some Action? Also, if every species has the same amount of points, then why do Wookies seem to have the most in every pool?

I've noticed that Mon Calamari and humans seem to be the best races for Artisans, and the professions that branch off of an Artisan. I don't really like Mon Calamari, lol, so I'll just go at it with a human.
