All depends on how much time your willing to spend on the profession. Weapons and armorsmith are pretty resource specific, so lots of time is needed getting the right resources with the best stats. Architect is pretty easy, but the need for them varies. Sometimes my sales are great, sometimes it's slow. DE is fun, and you can always advertise you do special orders. Working on chef still myself, but from what I've seen it will be a good cash maker. Just need to have a way to get organics like meat and milk in large quantities. I haven't tried shipwright either. So if your willing to spend the time and energy, armorsmith or weaponsmith are you best choices I say. Chef would be next, and then DE or architect. Now if your going to make that alt a crafter only, then you can probably get 2 skills to work off of.
What ever your choice is, good luck!

What i wrote about 10 threads down-
Shipwright - fields flooded and the cost of starting up is really high and ships are permanent. But i'll tell you when your looking for a new reactor theres never a loaded vendor
Weaponsmith- if you can find a niche you can make a good living. Deciding to be "The king of T-21s" probaly wont work since its all named materials and your fighting 12 pointers. But aiming at the jedi grinders and making grenades is always a possibility. I know its done well for me. But there are meleesmiths, swordsmiths, grenadesmiths(like myself) ect. Find a niche and fill it.
Architect - Takes a lot of materials to get started. Well not as many as shipwright but a bunch. But is by far the quickest grind if you have the ore and crystal to do the statues. Once i got the gungan heads it was about 90 minutes to master from there without a macro and with distractions. Its just an insanely easy grind. Thats the upside.
The downside there isnt much renewable income and there are a lot of architects out there because of the easy grind. Again this is a niche market. If your a master artisan you go after the 42 level crafting stations or go the interior decorator route. Architect is VERY resource intense
Armorsmith - Same as the others. Dont go into this saying "Im going to be the king of comp!" or "Oh i'll make 500 comp suits and make a billion". Without months of collecting resources and then the heartache of actually learning how long and what it takes to make a comp suit you will rethink your going here. It does have an easy grind if you have a tailor friend and factory access. And again the jedi grinders will want ubese and thats pretty easy to make with good numbers. Plus post combat upgrade we are all likely to be on the same footing.
As a master armorsmith I like both the constant experimentation and pushing for numbers and the training of the clients on PSG's. Once they learn about them and Imperial ones you will have built yourself the market. PSG's take master artisan factory runs AND six factory runs before completion though
Droid Engineer - Not much renewable income but there is just something fun about making talking trashcans. I just remastered it and hadnt done it since the revamp. Now im teaching my guild there usage (which most people will tell you is worthless) and they have fallen in love with them. Even my Bounty Hunters use both the combat droids and the boombots.
DE is about building your own market and making a name for yourself. Its about lots of critical annoying failures. Its about looking at static inventory. And its also about a 3PO that looks at you and says "So i supposed you actually want me to do something?" (actual line) because of a sarcastic personality chip. Right now Im having a lot of fun learning a profession that i had mastered in the past. Its a whole new expierence this time. And the new droids have a million uses
Good luck with your choice. Be patient and realize you have you have to build your market it wont come to you. But when you do you know you earned it
If you dont have a guild but have money then WS or AS since you can just buy the resources
If you have tons of cash and just want to have fun think DE and Architect. The first time someone moves into your house its a good feeling. DE is the same with low money potential but the fun of the profession

Dont forget Miner.
Income from resource sales by far outstrips both my Tailor and Artisan craftables sales. And Im only using 7 lots for it. Its not like billions of creds but its a respectable 60-150k per day, could be more but I sell resources for 2cpu unless they are really exceptional, and in that case 3ccpu. Pricing like that means that I sell stuff pretty fast.
