Depends on how you define "fun".
Armorsmiths and weaponsmiths appear to be the most profitable. Tailors have the most variety of single items and outfit combinations. Chefs have the most variety for item stat combinations (figuring out "meal plans" to give varied benefits within limited stomach space). Droid engineers make droids, which I think is cool in and of itself. Shipwrights are pretty popular, but have large resource requirements, a "non fun" feature shared with architect.
There's also Bioengineer if you want to go the "mad scientist" route (although that's not an artisan profession, you'll have to pick up medic and scout for it).

While architect is not the most wonderous profession out there it is fun and you get to meet alot of people..

If you're still new to the whole crafting experience I would probably recommend either going for master artisan or tailor. Tailor is nice because the resource requirements are not that high and thequality of your resources doesn't matter at all. Artisan is nice because you get to sample all kinds of different crafting and, while your resource qualities do matter for many of the things we artisans make, the resource requirements are usually much less complex than elite crafting professions.
As far as what's the most fun, I became an artisan over a year ago because I wanted to sell vehicles. I figured that I'd eventually move on into an elite crafting profession, which I did, but nothing ever took. Master artisan has been my only constant profession and I've enjoyed ever minute of it.

Hello all......
i have gotten enough general xp to start Architec, but then i was reading that Architech is not that fun of a profession, so i was wondering, which is one of the funnest professions???

Personally I think that tailor is one of the best artisan proffesions, you don't need to have all the best resources, and it makes a good template combo with enough skill points left over to go for a combat profession as well.
