1) There are other posts about grinding so I won't go into it here.
2) No, they don't need to be defended. However, they do require money and power. The only sources of power are wind, solar, and radioactive. Don't be fooled by things labeled "fuel" and such.
3) In general, no. However, most NPC cities and POI's have no-build zones around them. These vary in size. It's usually easy to tell where they end because you'll suddenly see lots of buildings in the area like outside of Coronet. Many player cities have zoning restrictions that will prevent harvester placement. Also, nearby creature lairs will prevent placement unless you destroy them.
4) Resources do not slowly diminish, but they will disappear altogether from time to time. Most things tend to stay in-shift for 7-10 days. After that time they are usually gone forever. SWGCraft.com has a good list of what's available and how long it's been around.

To the best of my knowledge, creatures will not attack your harvesters. The issue is that you will want to visit your harvesters and if a herd of Krayt dragons spawn around them, that might be difficult.
