The advanced game guide to crafting has some good info.

Also, sometimes ingredients will be general (metal) semi-specific (non-ferrous metal) or very specific (carbide aluminum). You'll see all resources in your survey list are grouped in categories. Just track down the one that the item needs for crafting. No hocus pocus about it.
Also, with regards to the quality of the sample, when you're starting out, quality isn't so much of an issue as just crafting the stuff, so when it says metal, just find a metal and go for it. The only way you can tell what quality a resource is, is by sampling it. At earlier levels, sampling is also your oly way to gather resources, other than buying them, or buying a harvester. Harvesters, however, are not cheap to run.
There's also good crafting guides at the Star Wars Galaxies Resource Center:

Hope this helps.

Look in the shecmatic of what you are making. It will say metal. Under your survey tool you will see metals. There might be a huge list, since there are lots of metals. You want one that has the best qualties of that object you are making. On the right side it will tell you what properties best make the item. It might be overall quality, conductivity, unit toughness, etc. It might be serveral of these.
someteims it asks for somethign speficfic like ferrous metal or low grade ore. The extact name of the resoruces change, but the catagories stay the same.
