I'm a newb at mineral mining, but I came across a bunch of high concentration stuff. Which one of these should I mine, or should I move on? And what should I sell it for?

There are many factors that come into play when determining which resource to mine. Assuming they are all the same general quality (or all low quality) go for the 88% steel. Its a popular grinding resource. Another factor is how long its been there. Metals generally last about a week on a planet then disappear. The longer its been there, the shorter time you have to mine it.
Something else to consider is what the sub category of steel and/or aluminum it is. Specific resources can be sold to certain professions for slightly higher prices, as they are usually a little harder to get. In a droid engineers case: duralumin aluminum, neutronium steel, and duralloy steel (among others) are rare resources where the stats dont matter. In a weaponsmiths case, high OQ and conductivity steel is always needed.
As for price, if its low quality it depends on your server's market price. Grinding quality minerals usually are priced between 1.5 cpu and 3 cpu.
