Resource quality varies from spawn to spawn and is random. I would recommend checking www.swgcraft.com to keep a track of current spawns, since you can browse for the high quality ones.

I have noticed that there are particular types of resource that tend to have high stats in specific attributes from spawn to spawn but that may well be a coincedence from the set of spawns I've seen since I started mining.

Its worth mentioning that although some resources you see may seemingly be average, for example most stats at say 700, this doesn't mean its not worth mining. It depends who uses that particular resource as some of the rare stuff might never have spawned really high stats so the 700 could be the highest its ever spawned.

Yep. For example, look up swgcraft for Axidite Iron. You'll see that HR,SR and UT is usually between 500-700. For Duralloy Steel, 650 in those statsis pretty bad. For Axidite Iron, that's pretty good. Doesn't mean that Duralloy Steel is always better though, some items specifically needs Axidite Iron. No, no one's going to list out what's a good stat for each of the resources, because frankly.. there's just too many resources.

And Shadowfire being an older server is irrelevant. Sure, you've probably had old spawns of all the resources, but that's not going to help you. You can look in vendors and/or galaxy trade boards to look for those resources and someone probably has them, but that's not what you're looking to do. You want to harvest them, so it only matters to you what's going to come up in the future.
