When making items, how can you tell what attribute is important for making that item? For example, how do i know when to look for a high conductivity and when to look for a high heat resistance? Is this just trail and error?

you can also see the importance of each attribute in percentage on the datapad under schematics. Also, note that some attributes of the material will effect one portion of the item you are making, but it will not have an effect on another, especially on more advanced items. For example, bone armor, maleability effects the pool encumbrance of the completed armor, but not the effectiveness.

The qualitys needed change from item to item. On the crafting screen (step 2 I think) where you add ingredients before you assemble, in the lower right corner there is a box where it specifies what qualities are needed. It might be overall quality 100% in which case OQ is the only important quality. If it's Unit toughness 66%, Decay resistance 33% - that meansUT and DR are needed, but UT is twice as important.
