Being an Armor smith... I'd hae to say that Armor Smith is better... I might be a bit bias though...
But they are completely different.
AS make armor (where as Doctors can buy buffs packs and what not, provide a service and turn a profit)and it may take some time to make really good armor due to gathering resources. So you want to make sure that you have money saved up cause you probably won'tmake any money or enough money early on.

I think that on our server at least, some of the wealthiest people are doctors that sell buff packs. Armorsmiths are wealthy also but somehow the buff pack business is VERY lucrative.

I would have to say that if you just want to turn a profit, then there are better professions for that. Armorsmith can be very lucrative, but it takes a lot of time to harvest search and gather the best resources to be competitive. It also takes a lot of crafting, harvestor and surveying time. So if you dont enjoy crafting and hours of playing around with different resources and enhancements then its not for you.
But if you are the type of person who likes to craft, experiment with different items, and feels real pride in creating something new or of high quality this may be for you. For me, there is nothing better than hearing a customers praise about a piece Im especially proud of.
Just keep in mind it is not instant riches, it takes awhile to become good....even after master. And the intitial investment for harvestors factories those resources that you just cant find yourself can be steep. I would say it is a good month or 2 before you will start to see a profit.
The Doctor profession can be played in more ways, you can be a crafter and just make and sell buffpacks if crafting is your thing. Or you can make a good living just buying buffpacks and selling buffs to the public without ever crafting if you are the type that likes to socialize a lot and meet new people all the time. Or you can mix it with a combat profession and be everyones favorite in battle, if you love to fight but like the idea of being able to heal.
But they are definitely very different professions to play. I would say that the smith professions as well as chef are the more hardcore crafting profs, but Doctor is a great option for those who want to do other things besides craft.
Just my 2 cents
