4 Mineral (Heavy or Medium)- I would think you could do with 3, but if you have the lots, may as well use 'em
2 Chemical (Heavy or Medium)- 3 would be good here as well, but it's up to you.
1 Floral (Medium)- This way, if you want, you can craft some Wookie armor, which is in very short supply it seems. On top of that, Chefs, Docs, etc need floral stuff but can't always harvest it, so you could make some money by getting good quality floral things and selling them to the crafters that need them at the time. Floral supplies tend to get fairly good prices as well.
Each harvester takes up 1 lot (correct me if I'm wrong). So with this, you'll have between 5-8 lots taken up (depending what breakdown you decide on). Of course, the above 'template' doesn't take into account harvesting your own power, you'd have to get that some other way.

How many lots do you have free, I would expect about 6 after you have counted in your house and a couple of factories. They are not permanent and you will use the ones required for the job that week. If no resources you need are in spawn mine either power with the minerals or look for contracts from other crafters to bring in a little cash. If so get the following.
Essential
6 x Ber 10 medium mineral (or Ber 13 heavy if money is not an issue)
6 x Ber 10 medium chemical (or Ber 13 heavy if money is not an issue)
Optional
6 x Ber 4 personal mineral (for times when you just can not get the larger ones to fit - and you need the resource)
6 x Ber 4 or 10 gas (you need gas to make some of the layers - energy mainly - but not required if you only ever do kinetic or stun)
6 x Ber 4 or 10 flora (for the wook armor)
Last tip- use swgcraft.com and set filters for the resources you need, then you can do a quick 2 min check to see what's out there every day. Never miss a good spawn.
