I have been told the Tailor is a good support proff for AS. Why is that? If it is true, then is it better to go MT or just a few select boxes? Does the quality of the Tailors product impact the quality of the armor or is it just a filler?

You only need field wear 3 in tailor to make all the components needed for armor (synthetic cloth, reinforced fiber panels, and armor padding for wookiee armor). And since none of this stuff has stats, you don't need to be a master tailor to make "good" components or use good resources to make them. Padding had stats before the CU but not anymore.
