Seriously - there is another thread where we went through all of the math for this. Vehicles are the worst possible thing to grind for xp. As you mention, *most* things that you craft give you 2 XP for every unit of resources you use. The vehicles give you about 0.2 to 0.3 XP per unit of resource.
Just get yourself to Eng 3 with survey tools, then grind personal harvesters / wind generators to Novice Architect.

Personal harvesters give a good amount of experience. If you have enough experiment points (4/4/x /x) then you can experiment them up to BER4 and sell them on the bazaar. Or you can just grind them on practice mode. If you are master Artisan then you can make vehicles. Vehichles give a lot of experience per item but the XP per resource used is low, however they can be sold.
