I've been thinking about placing a Dewback with saddle in my house as furniture....is this possible?

Yes. Get one from a bio-eng. Don't tame it. You can drop it while it's still in deed form.

To get the saddle wouldn't it have to be trained as a mount? SO I don't think dropping a deed would give you the saddle art.

Correct.

It must be tamed and trained as a mount to see it as such.

Otherwise, it just stands there making a mess on your floor.
